It is difficult to say just when humans began canoeing and kayaking. Although it may have been a time before canoe outriggers were invented, people have been travelling by small boat since the beginning of civilization. The etymology of the word kayak dates back to a time when the word referred to a "hunter's boat." Even without kayak outriggers, these boats were still an incredibly useful transportation tool. They were not too shabby as a hunting device, either, allowing humans to quietly stalk their prey over the water. Kayaks were favored over canoes because of the design, which involved a covered deck that shed high waves better than a canoe. In ancient times, they were typically brought out in the summer months so that hunters and fishers could use them to their full advantage.
How it was built depended on the unique needs of a particular society. Regional differences in these boats abound. For example, kayaks build in Greenland were sleek and low sitting, while boats made on Baffin Island were long and wide. Kayaks that date back to the early civilizations along the Bering Strait were short and wide. An umiak, which is a version of the kayak, was built to carry up to twenty people over the water.
The boat we now think of as long and slender is thought to have first been created by the Inuit, a people who resided in the arctic. However, there has been very little evidence to support this body of thought. The Siberian Coast has not turned up very many covered vessels from ancient times.
In any case, ancient Eskimos are known to have created their boats using a number of materials, including driftwood, and seal skins. The skins were wrapped around the wood to form a protective seal, as the material is waterproof and warming. Early vessels were generally made by constructing a wooden frame which was tied together using sinew or animal tendons. Seal bladders were added to the construction to help keep the kayaks afloat. In modern times, the practice of covering a boat in animal skin has fallen into disuse, though there are still a few places where such a boat may be found. Other forms of ancient boats were built from whale bone or driftwood.
When Europeans discovered a great use for the boat, they took a note from the arctic and covered them only this time with covers made from fabric. This kind of covering lasted until recent times, until the fifties when a modern company (Valley Products) began constructing the ancient cruisers out of fiberglass. In the eighties construction took another interesting turn, and a plastic boat hit the market. Even now work is being done to make them sturdier and lighter. These days, there are a number of different models, each produced for a different use. There are many sports which require a specific type of kayak, and now there are even boats designed for fisherman to stand up in. The ancient method of kayaking can be learned by one and all, no matter how little experience one has.

There are good marine grade sealers. However if the cost is not prohibitive, fiberglass the bottom to at least half was up the sides and then use a marine sealer.
